Clase Azul Mezcal San Luis Potosí is made from green agave (Agave salmiana), a variety native to the semi-desert slopes and plains of San Luis Potosí. In its natural habitat, the plant is considered mature at approximately 12 years old and reaches a height of nearly five meters. Growth and maturity depend on factors such as temperature, soil composition, and the surrounding water availability. A unique mezcal profile results from a process that includes slow steam cooking, double milling with a tahona, and distillation in traditional copper stills.
The carafe created for this edition is inspired by the history of the Huachichil people, a nomadic tribe who roamed the lands of the San Luis Potosí desert in Central Mexico. The red color of the ceramic refers to the name of these people, which means "red-painted heads." Handmade by Mexican artisans using a technique that incorporates colored yarns to create intricate designs, the carafe's stopper depicts a beautiful oneiric landscape of desert mountains and valleys filled with bright red finches in flight.
